About the Recipe

Gỏi cuốn (Vietnamese Summer Roll) is one of the most iconic Vietnamese dishes. Typically, Summer rolls are served to families as DIY food. Everyone rolls their own by selecting the ingredients from a sharing plate of vegetables and meat!

Ingredients

  • Nem Viet Summer Roll Kit, containing:

    • 8 Rice Paper Sheets

    • Rice Vermicelli Noodles

    • Vietnamese Dipping Sauce

  • 200g Cooked Prawns (Or Your Choice Of Protein)

  • 50g Lettuce Leaves

  • Thinly Sliced Carrots, Cucumbers and Spring Onoins


Preparation

Step 1


Place the rice vermicelli noodles in a pan of boiling water. Reduce the heat and boil for 3 to 5 minutes, or until al dente, and drain with cold water.



Step 2


Place warm water in a large flat-bottomed dish. Working with one rice paper at a time, place one rice paper in the warm water for 3-4 seconds.



Step 3


Lay the rice paper flat on a chopping board. Place a lettuce leaf on the rice paper. Place the vermicelli noodles, sliced vegetables, and prawns in the centre ensuring to leave room at the sides.



Step 4


Fold the bottom of the rice paper completely over the filling. Then fold in the sides.



Step 5


Roll up the summer rolls as tightly as possible. Practice makes perfect! Repeat steps 2-5 for the remaining rice paper sheets.


Tips: For extra crunch and flavour, add beansprouts, fresh mint, and coriander to the rolls.
