About the Recipe
Vietnam's National Dish.
Pho is eaten across many regions in Vietnam and is officially the country's national dish. Although the classic Hanoi pho is traditionally eaten with beef broth, there are over 40 variations of the dish whereby each bowl is differentiated by the broth, type of meat and type of noodle used.

Ingredients
Nem Viet Pho Kit, containg:
Rice Noodles
Herbs & Spice Infusion Sachet
Black Soybean Sauce
Vietnamese Chilli Sauce
250g Tofu (Or Your Choice Of Protein)
A handful of extra fine green beans - chopped
100g Oyster Mushrooms
1 Spring Onion - chopped
100g Beansprout
450ml Vegetable Stock
Sriracha Sauce & Asian Basil for Garnish
Preparation
Step 1
In a pan, bring to a boil the vegetable stock & 250ml water. Add the herb & spice infusion sachet, turn down the heat and simmer for about 3 minutes.
Step 2
Fry the oyster mushrooms and tofu over a high heat. The mushrooms will lose their water before they start to caramelise. Place the rice noodles in a separate pan, add the green beans, and pour in boiling water. Cover with a lid for 3 minutes until the noodles and green beans are cooked.
Step 3
Remove the herb and spice sachet from the pan, make sure to squeeze all the flavour out using a spoon on the side of your pan! The soup is now ready. Use tongs to split the noodles, green beans, tofu and mushrooms into your serving bowls. Ladle the herb soup over the noodles.
Step 4
Top with beansprouts. Add the Vietnamese chilli sauce and black soybean sauce as desired. Garnish with spring onions and a good drizzle of Sriracha Sauce. Make sure to serve hot!
TIP: For more colour and flavour, garnish with chopped coriander and finely sliced Bird's Eye chillies.
